The determination of iron (Fe) and zinc (Zn) in black grapes (juice, pulp, seeds and stalk) grown in ten different regions of Elazığ were carried out by using atomic absorption spectrometry. According to analysis results, the highest and lowest values were obtained to be, Fe: 116,85±5,69 mg/kg (grape stalk, Saryyakup), 0,93±0,11 mg/L (grape juice, Harput), Zn: 16,17±0,77 mg/kg (grape stalk, Verena), 0,39±0,09 mg/L (grape juice, Verena), respectively. The results obtained for the Fe in grape stalks, and Zn in grape seeds contents were higher than grape juice and pulp, show that they depend significantly on regions. Fe and Zn showed greater concentration in grape stalk. Fe and Zn level in black grapes grown in the region Verena were higher than the other regions.
