YENİLEBİLİR FİLM/KAPLAMA ÜRETİMİNDE GLİSEROL KONSANTRASYONUNUN ÖNEMİ: CHİA MÜSİLAJ (Salvia hispanica) KAPLAMA ÜZERİNE BİR ARAŞTIRMA

Bu araştırma, çiya musilaj bazlı yenilebilir kaplama/film üretiminde kullanılacak olan optimum gliserol konsantrasyonunu belirlemeyi amaçladı. Deney, dört farklı (%0, %1, %5 ve %10 gliserol) tasarım grubu kullanılarak gerçekleştirildi. Kullanılan gliserol konsantrasyonlarının film/kaplamaların, kalınlığı nem içeriği ve suda çözünürlüğüne olan etkileri değerlendirildi. Çalışma bulguları filmlerin özellikleri üzerine %1 gliserol konsantrasyonun daha etkili olduğunu ortaya koydu.

THE IMPORTANCE OF GLYCEROL CONCENTRATION IN EDIBLE FILM/COATING PRODUCTION: A STUDY ON CHIA MUCILAGE(Salvia hispanica) COATING

This research aimed to determine the optimum glycerol concentration to be used in the production of chia mucilage-based edible film/coating. The experiment was performed using four different design groups (0%, 5%, and 10% glycerol). The effects of the glycerol concentrations used on the thickness, moisture content and water solubility of the films/coatings were evaluated. The study findings revealed that 1% glycerol concentration was more effective on the properties of the films.
